the weekend breakfast

There's nothing like waking up on the weekend and actually having a hot meal versus the office oatmeal or deli egg sandwhich on-the-go. Here we have:

Cinnamon Nutmeg pancakes (Aunt Jemima with a twist and almond milk), two-brown egg omelette with spinach, olive oil fried plantains and fresh strawberries.

So simple and nutritious - wake up!

Pancakes every weekend is blah! I decided to make eggs atop toast paired with avocados, red onions, tomatoes and peppers! Of course, we have a side of strawberries - they are on sale every weekend so why not?

Brunch for 1

I tried ackee and salt fish for the first time in February and fell in love! I took it upon myself to make the Jamaican-staple breakfast but I totally americanized it with salted cod and canned ackee - it was still A1! I also have here homemade french toast accompanied by avocado slices and fresh strawberries.
